Pasta with Spinach, Pancetta and Brie

It really doesn’t get any easier than this.



  • 2 cups of pasta
  • 2 cups of spinach
  • 1/2 cup of pancetta ( I used cooked )
  • 8 oz ( 200 gr. ) of brie cheese
  • salt, pepper

Cook pasta al dente. In a separate pan cook the pancetta until it browns on the edges. Add fresh spinach cut in strips. When wilted ( that takes only a few moments) add the pasta and the brie. Stir a couple of times until the cheese melts. Season with salt and pepper.

( A little trick I learned from Jamie Oliver – to prevent the pasta from drying out once served, reserve 1/2 cup of water you used to cook the pasta in and add it to the pan.  The warm water and the starch from the pasta will thicken the sauce and help release the flavors. It never fails. Thanks Jamie. ).
